With simple ingredients and no great cooking skills, you can make fantastic fudge that will tickle your taste buds and keep you away from high carb, sugary fudge. Chocolate Keto Fudge (in <5 minutes)


Ingredients:


1 cup coconut oil

1/4 cup erythritol

dash sea salt

1 Tablespoon pecan pieces (optional)

1/4 cup shredded coconut (optional)

1 Tablespoon cocoa (unsweetened)


Melt coconut oil and erythritol in medium saucepan over medium heat until crystals dissolved.

Add cocoa and mix in well until dissolved.

Add remaining ingredients.

Pour by spoonfuls into candy molds, paper candy cups,  or alternately on a plate previously covered with waxed paper.

Place in the refrigerator until hardens (about 20-30 minutes).

Serving size: (2)  1-2 inch in diameter pieces or squares.

Calories= 206, Total Fat= 23.5 grams, Total Protein= 0.3grams, Net Carbs= 0.6 grams.

Easy Peanut Butter Keto Fudge


Ingredients:


1 cup coconut oil

1 Tablespoon butter (or MELT spread)

1/2 cup granulated erythritol

dash sea salt

1/2 cup peanut butter)

1 teaspoon vanilla

1/4 cup coconut (dehydrated and unsweetened)

1/4 cup pecan pieces (may also use almonds or TVP)


Melt butter, coconut oil, and erythritol in medium saucepan over medium heat for about 3-5 minutes (until crystals dissolved).

Remove from heat.

Add peanut butter and vanilla.

Mix all ingredients until dissolved.

Add remaining ingredients and mix in well.

Pour mixture into pie pan previously layered with waxed paper.

Place pie pan into refrigerator and allow to harden completely (about 20-30 minutes).

Slice into 1-2 inch squares and place in container with lid back into the refrigerator.

9.   Makes 20-24 pieces of fudge in 1-2 inch squares.


Serving size 2 pieces.
