Chocolate Peppermint Brownies



Brownie ingredients:


½ cup melted butter

½ cup erythritol

1 packet of stevia (1 teaspoon)

2 eggs

⅓ cup unsweetened cocoa (Ghiradelli)

¼ cup chocolate whey powder

½ cup almond meal

¼ teaspoon sea salt

½ teaspoon baking powder

1 Tablespoon sensato mini chocolate chips

1 Tablespoon Greek unsweetened, unflavored yogurt

1 teaspoon pure vanilla

1 teaspoon Trader Joe’s (or similar) peppermint extract


Icing:

¼ cup cream cheese

2 Tablespoons white powdered Stevia extract (Trader Joe’s)

1 teaspoon vanilla

½ teaspoon Trader Joe’s peppermint extract

1 Tablespoon unsweetened cocoa

1 Tablespoon sugar-free Hershey’s chocolate syrup



Preheat oven to 350 degrees. Grease an 8 or 9 inch pan.


1) Mix erythritol, melted butter, stevia, and eggs until creamy.

2) Stir in cocoa, chocolate whey powder, almond meal, sea salt, baking powder, mini   chocolate chips, Greek yogurt, vanilla and peppermint extract.

Combine all ingredients well.

3) Add batter to greased pan.


Bake at 350 degrees for 25-30 minutes (do not overcook).


To make icing:


1) Combine icing ingredients into bowl and whip until smooth and mixed well.

2) While brownies are still warm, ice them with the mixture.

3) Allow to cool before slicing and serving.



Makes 16-20 brownies.
