A Simple Low Carb Life

Mini Ham and Cheese Quiche



¼ cup coconut milk, unsweetened

3 eggs (beaten)

¼ cup extra heavy whipping cream

⅓ cup coconut flour

¼ cup melted butter

¼ cup mascarpone cheese

4 slices of deli ham or turkey ham (cubed about ½ inch)

1 Tablespoon ground hazelnut meal

½ teaspoon sea salt

1 Tablespoon garlic powder

1 teaspoon tabasco sauce


Preheat oven to 325 degrees.


Mix above ingredients in a mixing bowl.

Fill 12 cupcake tins or silicone muffin molds ¾ full with batter.

Bake in preheated oven for 20 minutes or until toothpick inserted comes out clean.

Allow to cool before removing from muffin containers.

Ready to serve.


Makes 12 cupcake sized quiches.
